应该是不一样的, 不知道以下两个解释能不能满足你baking soda 和 baking powder 类似但不一样。baking soda 是碳酸氢钠,baking powder 是碳酸氢钠加上酸(干的),这样当 baking powder 见到水以后,二氧化碳就会更快地释放出来。美国买到的 baking powder 都是所谓 double action baking powder,也就是当遇到水以后,它要释放出一些气,当遇到热以后,还会释放一些。(这样,就不会在加热的时候没气了)有的时候,baking soda 和 baking powder 混起来用最好,但是混合的比例要通过试验找到。这恐怕是烹饪高级班的把戏了吧。Q.
